White Chocolate Macadamia Nut Cupcakes

I’ve turned my favorite cookies into a cupcake recipe. These are very yummy and the frosting is simply amazing with only two ingredients.

Ingredients:

Cupcakes:

  • White Cake Mix
  • 1 cup White Chocolate Chips
  • 3 Egg Whites
  • 1/3 cup Vegetable Oil
  • 1 cup Water
  • 1/2 cup Chopped Macadamia Nuts

Frosting:

  • 4 sticks Butter
  • 2 cups White Chocolate Chips

 

Directions:

Cupcakes:

  1. Preheat oven to 350°.
  2. In a large bowl mix cake mix, egg whites, vegetable oil, water, 1 cup of white chocolate chips and chopped macadamia nuts at low speed.
  3. Place cupcake liners in cupcake pan, then fill cups 2/3 full of cake batter.
  4. Bake for 18 to 20 minutes.
  5. Remove cupcakes from oven and allow to cool completely.

Frosting:

  1. In a large microwave safe bowl melt butter and white chocolate chips for 30 seconds at a time in the microwave.
  2. Stir mixture after each 30-second period. The butter and chocolate will start to separate when melting.
  3. After the mixture is completely melted, stir one last time, then cover the container with lid or clear plastic wrap and refrigerate till mixture hardens (about three to four hours, or this can be done over night).
  4. Using a high power electric beater, beat mixture on medium speed until smooth.
  5. Decorate cupcakes using the frosting as desired.

Additional Info:

Cupcakes will need to be stored in the refrigerator if  they are not being served within 24-hours of decorating them.
Frosting is very rich.
