Gooey Strawberry Coffee Cake
Gooey cakes are so delicious, especially when eaten warm, right out of the oven, with a scoop of ice cream on top. This recipe is made simple with a box cake mix.
Ingredients:
- 1 box yellow cake mix (just the mix)
- 1 egg
- 1/2 cup butter, melted
- 1 cup chopped strawberries berries
- 1/2 cup sweetened condensed milk
- 1/2 cup brown sugar
- 1/4 cup flour
- 1/4 cup butter, cold (cut into small pieces)
- 1 tsp cinnamon
Directions:
- Preheat oven to 350°.
- In a large bowl combine the cake mix, egg and melted butter until it becomes a soft dough. Use half of the dough for the crust, and press it into the bottoms of small baking ramekins.
- Spread the strawberries evenly over the crust.
- Drizzle with the sweetened condensed milk.
- Use the remaining half of the crust to cover the raspberry filling, as best you can.
- In a bowl combine the brown sugar, flour, cold butter, and cinnamon, until it becomes a crumbly.
- Sprinkle on top of the cakes.
- Bake for 30-35 minutes or until the center is only slightly jiggly.
Additional Info:
For a yummy surprise, add a cup of white chocolate chips to the recipe and include them with the strawberries and condensed milk.
