Gooey Strawberry Coffee Cake

Gooey cakes are so delicious, especially when eaten warm, right out of the oven, with a scoop of ice cream on top. This recipe is made simple with a box cake mix.

Ingredients:

  • 1 box yellow cake mix (just the mix)
  • 1 egg
  • 1/2 cup butter, melted
  • 1 cup chopped strawberries berries
  • 1/2 cup sweetened condensed milk
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1/4 cup butter, cold (cut into small pieces)
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 350°.
  2. In a large bowl combine the cake mix, egg and melted butter until it becomes a soft dough. Use half of the dough for the crust, and press it into the bottoms of small baking ramekins.
  3. Spread the strawberries evenly over the crust.
  4. Drizzle with the sweetened condensed milk.
  5. Use the remaining half of the crust to cover the raspberry filling, as best you can. 
  6. In a bowl combine the brown sugar, flour, cold butter, and cinnamon, until it becomes a crumbly.
  7. Sprinkle on top of the cakes.
  8. Bake for 30-35 minutes or until the center is only slightly jiggly.

Additional Info:

For a yummy surprise, add a cup of white chocolate chips to the recipe and include them with the strawberries and condensed milk.
